Carrot Cake Baked Oats with High Protein Cream Cheese Frosting
Ingredients:
2 cups of oatmeal
1 tbsp cinnamon
1 tsp baking powder
Pinch of salt
2 eggs
1 tsp vanilla extract
1 1/2 cups shredded carrots
1-2tbsp chia seeds
1- 1 3/4 cup of milk
High Protein Cream Cheese Frosting: Whisk together until smooth and drizzle over warm baked oats
1/2 cup plain greek yogurt OR vanilla (if using vanilla yogurt omit maple syrup & vanilla extract)
2 tbsp of cream cheese
Splash of vanilla and maple syrup till you reach desired sweetness
Optional add ins: Walnuts
Instructions:
Preheat: Preheat oven to 375 degrees. Grease or line a baking dish with parchment paper.
Mix dry ingredients: In a bowl whisk together all dry ingredients.
Mix dry ingredients: In a separate bowl, whisk eggs, milk, maple syrup, and vanilla.
Combine: Slowly fold the wet mixture into the dry and stir until combined.
Fold: Fold in grated carrots, chia seeds, and walnuts.
Pour: Pour mixture into baking dish and bake for 35-40 minutes until oats are set in the center and lightly golden.
Top it off: Let cool slightly before slicing. Top with yogurt frosting!
