Carrot Cake Baked Oats with High Protein Cream Cheese Frosting

Ingredients:

  • 2 cups of oatmeal

  • 1 tbsp cinnamon

  • 1 tsp baking powder

  • Pinch of salt

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 1/2 cups shredded carrots

  • 1-2tbsp chia seeds

  • 1- 1 3/4 cup of milk

  • High Protein Cream Cheese Frosting: Whisk together until smooth and drizzle over warm baked oats

    • 1/2 cup plain greek yogurt OR vanilla (if using vanilla yogurt omit maple syrup & vanilla extract)

    • 2 tbsp of cream cheese

    • Splash of vanilla and maple syrup till you reach desired sweetness

  • Optional add ins: Walnuts

Instructions:

  1. Preheat: Preheat oven to 375 degrees. Grease or line a baking dish with parchment paper.

  2. Mix dry ingredients: In a bowl whisk together all dry ingredients.

  3. Mix dry ingredients: In a separate bowl, whisk eggs, milk, maple syrup, and vanilla.

  4. Combine: Slowly fold the wet mixture into the dry and stir until combined.

  5. Fold: Fold in grated carrots, chia seeds, and walnuts.

  6. Pour: Pour mixture into baking dish and bake for 35-40 minutes until oats are set in the center and lightly golden.

  7. Top it off: Let cool slightly before slicing. Top with yogurt frosting!
