Elote Chicken
Ingredients:
For the chicken:
1 lb chicken breasts
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp chili powder
1 tbsp garlic powder
1 tsp cumin
1/2 tsp of cajun seasoning or everything but the elote seasoning from trader joes
1 tsp salt
1 tsp black pepper
For the elote:
2 cups of frozen corn (thawed)
1/2 red onion, diced
1 jalapeno deseeded & diced
1/2 cup of greek yogurt
1 tbsp of primal kitchen mayo (optional)
Juice of 1 lime
2 tbsp chopped cilantro
1/3 cup of cotija cheese
Seasoning to taste: Salt, black pepper, smoked paprika, cajun seasoning
Directions:
1. Season the chicken: I seasoned my chicken with chili powder, garlic powder, smoked paprika, cumin, salt, and pepper to taste.
2. Cook your chicken: Heat olive oil in a pan over medium-high heat. Cook chicken for 4-6 minutes per side until fully cooked. Let rest.
3. Make your elote: In the same skillet you used for the chicken lightly char your red onion, jalapeño, and corn. Once corn is charred place in a mixing bowl. Combine greek yogurt, mayo, lime juice, seasonings, leftover chicken juice, cotija cheese, and cilantro.
4. Bowl time: Add a base of rice, quinoa, or lettuce to each bowl. Top with sliced chicken & your elote mix. Garnish with extra cotija cheese, cilantro, avocado or a squeeze of lime!
