Ground Turkey and Roasted Eggplant Skillet

Ingredients:

    • 1 lb lean ground turkey

    • 1 large eggplant, diced into 1-inch cubes

    • 1 tbsp olive oil

    • 3 cloves garlic, minced

    • 1/2 yellow onion, diced

    • 1 can crushed tomatoes

    • 1 tbsp tomato paste

    • 1 cup of canellini beans

    • Handful of spinach

    • 1/4 cup of shredded mozzarella cheese

    • Sprinkle of parmesan cheese

    • Seasonings:

      • Garlic powder

      • Italian seasoning

      • Salt & pepper to taste

      • Red pepper flakes (optional)

    Directions:

    1. Prep the eggplant: Slice into rounds and lightly salt. On a baking sheet with paper towels laid down allow eggplant to sit for 10 minutes and then pat dry. Then dice up eggplant into cubes.

    2. Cook turkey: Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté for 2-3 minutes until fragrant. Add ground turkey, break apart, and cook until browned. Season meat with salt, pepper, garlic powder, and Italian seasoning.

    3. Add your eggplant: Stir in diced eggplant. Cook for 5-8 minutes until it softens and shrinks. Optional: You can roast at 400 degrees for 20 minutes until soft and slightly golden. For quicker meal prep just cook directly in the pan.

    5. Add sauce and seasoning: Stir in crushed tomatoes, tomato paste, additional Italian seasoning, and garlic powder. Simmer uncovered for 10-15 minutes until thickened.

    6. Finishing touches: Add your cannellini beans, spinach, shredded mozzarella, and parmesan cheese. Enjoy!
