High-Protein Turkey Bacon & Cheddar Biscuits
Ingredients:
3 slices of cooked turkey bacon, diced
3 eggs
1 egg for egg wash
1 cup cottage cheese
2 cups self-rising flour
1/4 cup shredded cheddar cheese
Seasonings:
1/2 tsp salt & pepper
1/2 tsp garlic powder
1/2 tsp everything but the bagel seasoning
Instructions:
Preheat: Preheat oven to 425 degrees.
Cook: Cook turkey bacon to your preferred crispiness, then dice into small pieces.
Mix wet ingredients: In a bowl whisk together eggs, cottage cheese, garlic powder, salt, and pepper.
Mix dry ingredients: In a separate bowl, add self rising flour and another pinch of seasonings + everything but the bagel seasoning for more flavor.
Combine: Slowly fold the wet mixture into the dry mixture until a dough forms.
Once the dough reaches a workable consistency: fold in the diced turkey bacon and 1/4 cup of cheddar. Knead gently to distribute everything evenly.
Form biscuits: Scoop about 1/4 cup of dough per biscuit and place them on a parchment-lined, lightly greased baking sheet.
Top: Brush with egg wash and sprinkle a little extra cheddar for that crispy, golden finish.
Bake: Bake at 425 for 10-12 minutes. Bake for an additional 2 minutes for extra goldenness.
