Pumpkin Tiramisu

Pumpkin Tiramisu

Ingredients:

  • 8 oz mascarpone

  • 1 cup heavy cream

  • 1 cup pumpkin puree

  • 1/3 cup maple syrup for filling

  • 2 tbsp of maple syrup for sweetening espresso

  • 1 tsp vanilla extract

  • 1 cup of espresso or coffee, cooled

  • 1-2 packages of lady fingers (about 24-30 pieces)

  • 1-1/2 tsp pumpkin pie spice or cinnamon

  • Pinch of salt

Instructions:

  1. In a large bowl mix heavy whipping cream, mascarpone, pumpkin, maple syrup, cinnamon, and a pinch of salt. Whisk until thick.

  2. Sweeten espresso with maple syrup & cinnamon. Mix together.

  3. Lightly dip lady fingers and place down on your baking dish.

  4. Once complete with your lady finger layer, go in with your filling, repeat lady finger, and repeat filling.

  5. Top with coco powder.

  6. Allow to chill overnight (minimum 4 hrs)
