Sheet Pan Kebabs
Ingredients:
Kebab:
1lb ground meat
1 bunch parsley
1 large onion
1 red pepper
3 garlic cloves
1 jalapeno (deseeded is my preference)
1/4 cup tomato paste
Seasonings: 1 tsp salt, 1 tsp black pepper, 2tsp smoked paprika, 1 tsp turmeric, 2 tsp garlic powder.
Salad:
2-3 tomatoes
1/2 red onion, sliced
Parsley
Juice of 1 lemon
2 tbsp olive oil
Seasonings: Salt, pepper, oregano
Tzatziki
½ cup finely grated cucumber
1 cup greek yogurt
1-2 tablespoon fresh lemon juice & zest
½ tablespoon of olive oil
1 clove of garlic
Seasonings: ¼ teaspoon of salt & pepper, fresh dill
Directions:
Blend parsley, onion, pepper, garlic and jalapeño if using.
Strain well, mix with meat, tomato paste & spices.
Spread on a sheet pan ½" thick.
Score into strips/squares. Bake 15 min at 425°F, then broil 3-5 min to brown.
Toss tomatoes, onion & parsley with olive oil, lemon, salt & pepper.
Tzatziki: Combine greek yogurt, garlic, zest and juice of 1/2 a lemon, dill, salt, and pepper.
Build your gyro: kebab meat, salad, tzatziki, feta cheese. I used a lavash flax seed bread rather than traditional pita
