Sticky Teriyaki Meatballs

Ingredients:

  • 1 lb of pork

  • 1 shallot, diced

  • 1/2 cup of panko breadcrumbs

  • 1 1/2 tbsp of minced garlic

  • 1/4 of a carrot, grated

  • 1 knob of ginger

  • 1 egg

  • 2 tbsp of green onion

  • 3 tbsp of soy sauce

  • Seasonings: Garlic powder, black pepper, salt (optional)

  • Teriyaki sauce ingredients: 1/2 cup of hoisin sauce, 1/4 cup of rice vinegar, 3 tbsp soy sauce, 1 knob of ginger grated, 1 tbsp of minced garlic, and 1 tsp of sesame oil

Directions:

  1. In a bowl add 1 lb of pork

  2. Add 1/2 cup of panko breadcrumbs, 1 diced shallot, 1 1/2 tbsp of minced garlic, 1/4 cup of grated carrot, 1 knob of grated ginger, 1 egg, and 2 tbsp of green onion to a bowl.

  3. Season with pepper, garlic powder, and salt.

  4. Add 3 tbsp of soy sauce. Mix and shape your meatballs.

  5. Bake in the oven at 450 degrees for 15 minutes. Flip meatballs and cook for an additional 5 minutes.

  6. Teriyaki sauce: Add 1/2 cup of hoisin sauce, 1/4 cup of rice vinegar, 3 tbsp soy sauce, 1 knob of ginger grated, 1 tbsp of minced garlic, and 1 tsp of sesame oil to a pan. On low-medium heat allow the sauce to thicken.

  7. Once the sauce has thickened add the cooked meatballs back into the pan and mix until fully coated.

  8. Garnish with green onion & sesame seeds!
