Sweet Potato Turkey Chili
Ingredients:
1 lb lean ground turkey or chicken (or ground beef if preferred)
1 tbsp olive oil
1 large onion, diced
2 red bell pepper, diced
3 cloves garlic, minced
1 medium sweet potato, peeled and diced into small cubes
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) kidney beans, rinsed and drained
1 can (28 oz) crushed tomatoes
2 cup low-sodium chicken or veggie broth
2 tbsp tomato paste
Seasonings: 2 tsp chili powder, 1 tsp smoked paprika, 1 tsp cumin, ½ tsp cinnamon (optional adds a cozy fall vibe)
½ tsp cayenne (optional for heat), salt & black pepper to taste.
Directions:
Cook the meat: In a large pot or Dutch oven, heat olive oil over medium heat. Add ground turkey, breaking it up, and cook until browned.
Sauté veggies: Add onion, bell pepper, and garlic. Cook 3–4 minutes until softened.
Add sweet potato & spices: Stir in diced sweet potato, chili powder, paprika, cumin, cinnamon, cayenne, salt, and pepper. Cook 2 minutes to bloom the spices.
Add liquids + beans: Stir in tomato paste, crushed tomatoes, broth, black beans, and kidney beans. Mix well.
Simmer: Bring to a boil, then reduce heat to low. Cover and simmer 25–30 minutes until sweet potatoes are tender. Stir occasionally.
Top it off: Top with cilantro, sour cream, greek yogurt, avocado, or jalapeños for a kick!
