Creamy High Protein Alfredo Spaghetti Squash with Chicken Sausage and Roasted Broccoli

Ingredients:

    • 1 spaghetti Squash

    • 1 tbsp olive oil

    • 2 Amy lu chicken sausages

    • 3 cups of Broccoli florets

    • Seasonings:

      • 1/2 tsp salt

      • 1/2 tsp black pepper

  • Cottage cheese Alfredo

    • 1 1/2 cups of cottage cheese

    • 1/4 cup of grated parmesan cheese

    • 1-2 cloves of garlic

    • 1/4 cup of milk

    • salt and pepper to taste

    Directions:

    1. Roast the spaghetti squash: Heat oven to 400 degrees. Slice squash lengthwise, scoop seeds. Drizzle with olive oil, salt, and pepper. Place cut-side down on baking sheet. Roast for 35-45 minutes until fork tender.

    2. Roast broccoli and chicken sausage: On a baking sheet season your broccoli with salt, pepper, and garlic powder. Cut up chicken sausage and place on baking sheet. Bake at 400 until broccoli is tender with a slight crisp!

    3. Make the alfredo: In a blender blend cottage cheese, parmesan, garlic, milk, salt and pepper until creamy! Taste and adjust seasoning to your liking.

    4. Bring it together: Add spaghetti squash to a large pan over low heat. Pour in alfredo sauce and gently warm. Fold in sausage and broccoli. Cook just until everything is coated and heated through. Enjoy!
