Ground Turkey Mediterranean Burgers
Ingredients:
1 lb lean ground turkey
1/4 cup of crumbled feta cheese
1/2 red onion, diced
1 bell pepper, diced
1 cup of fresh spinach, finely chopped
2 cloves of garlic, minced
Seasonings:
1 tsp oregano
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp garlic powder
Creamy Garlic-Lemon Feta Yogurt sauce
1 cup of greek yogurt
1/4 cup feta cheese
3 small garlic cloves
Juice of 1 lemon
1 tbsp olive oil
2 tbsp of water
Pinch of salt to taste
Black pepper to taste
Directions:
1. Chop: Dice your peppers, spinach, garlic, and onion until finely diced. In a large skillet sauté till tender and remove from heat.
2. Form your patties: In a large bowl, gently mix all ingredients until just combined. Form into 4-5 patties.
3. Cook: Heat olive oil in a skillet over medium heat. Cook patties 5-8 minutes per side, until golden.
4. Creamy Garlic-Lemon feta yogurt sauce: In a food processor or blender combine greek yogurt, feta, garlic, lemon, olive oil and seasonings listed above. Blend until smooth. Taste and adjust lemon, garlic, or seasonings as needed.
5. Garnish: Top your burgers off with feta, cucumbers, and our creamy garlic-lemon feta sauce & enjoy!
