One Pot Lemon Chicken Orzo
Ingredients:
Marinade:
1 lb boneless skinless chicken thighs
1/2 yellow onion
2 cloves of garlic, diced
2 lemons
Fresh parsley
2.5 cups of organic chicken bone broth
1 tbsp olive oil
Seasonings:
1/2 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
1/2 tsp smoked paprika
1/2 tsp garlic powder
Directions:
1. Season chicken: Season your chicken thighs with garlic, salt, pepper, smoked paprika, and the juice of one lemon.
2. Cook: In a large pan, cook chicken till fully cooked. Remove chicken and add 1/2 onion diced and 2 cloves of minced garlic. Cook until fragrant.
3. Add your orzo: Add 2 cups of orzo and slightly toast. Add 2.5 cups of chicken bone broth and mix. Add the juice of one lemon and allow the orzo to simmer for 10 minutes till fully cooked.4. Season: Season with Italian seasoning, salt, and pepper to taste.
5. Garnish: Add the chicken back in. Garnish with parsley, lemon, and parmesan cheese.
