High Protein Chicken Enchiladas
Ingredients:
1 Rotisserie chicken, shredded
1/2 cup of cottage cheese, blended until smooth
1 cup of salsa
1 tbsp of diced green chilies
1/2 cup of reduced fat cheese
Cilantro
Seasonings: 1 tbsp cumin, 1 tsp garlic powder, 1 tsp paprika, 1 tsp salt, 1 tbsp black pepper.
Directions:
Preheat oven to 375 degrees.
Mix shredded chicken, 1/2 cup of blended cottage cheese, 1/2 cup of salsa, 1 tbsp of green chilies, and spices.
Spoon 1/2 cup of filling into each tortilla, roll, and place seam side down in a greased baking dish.
Top with 1/2 cup of salsa and 1/2 cup of cheese.
Cover with tinfoil and bake for 20 minutes. Uncover and bake for an additional 10 minutes. For extra crispiness broil for a few minutes!
Garnish with cilantro, jalapeño, or a dollop of greek yogurt
