High Protein Chicken Enchiladas

Ingredients:

  • 1 Rotisserie chicken, shredded

  • 1/2 cup of cottage cheese, blended until smooth

  • 1 cup of salsa

  • 1 tbsp of diced green chilies

  • 1/2 cup of reduced fat cheese

  • Cilantro

  • Seasonings: 1 tbsp cumin, 1 tsp garlic powder, 1 tsp paprika, 1 tsp salt, 1 tbsp black pepper.

Directions:

  1. Preheat oven to 375 degrees.

  2. Mix shredded chicken, 1/2 cup of blended cottage cheese, 1/2 cup of salsa, 1 tbsp of green chilies, and spices.

  3. Spoon 1/2 cup of filling into each tortilla, roll, and place seam side down in a greased baking dish.

  4. Top with 1/2 cup of salsa and 1/2 cup of cheese.

  5. Cover with tinfoil and bake for 20 minutes. Uncover and bake for an additional 10 minutes. For extra crispiness broil for a few minutes!

  6. Garnish with cilantro, jalapeño, or a dollop of greek yogurt
