Philly Cheesesteak Stuffed Peppers

Ingredients:

  • 1 lb of lean sirloin or flank steak (thinly sliced)

  • 4 large bell peppers (any color, halved, and de-seeded)

  • 1 large onion, thinly sliced

  • 1 package of shiitake mushrooms, diced

  • 2 tbsp olive oil

  • 4 tbsp Worcestershire sauce

  • 2 tbsp soy sauce

  • 3 pieces of provolone cheese

  • Seasonings: Oregano, garlic powder, salt, black pepper

Directions:

  1. Prepare peppers: Slice the top of the bell peppers off, cut peppers in half, and remove seeds. Blanch in boiling water for 5 minutes until peppers are slightly tender. Place on a baking sheet.

  2. Cook filling: Heat 2 tbsp of olive oil in a skillet, add one thinly sliced onion till softened. Add one package of shiitake mushrooms finely diced, cook until soft.

  3. Marinate steak: Add steak to a bowl. Season with salt, pepper, garlic powder, and oregano. Add 2 tbsp of Worcestershire sauce and 1 tbsp of soy sauce. Marinate for at least 30 minutes.

  4. Add meat to onion & mushroom filling. Saute until meat is fully cooked, while cooking you can add 2 more tbsp of Worcestershire. and 1 tbsp of soy sauce.

  5. Assemble: Spoon filling evenly into peppers. I topped each pepper with a 1/2 piece of provolone cheese.

  6. Bake: Place in the oven at 350 for 10 minutes, or until cheese is melted and peppers are tender.

  7. Serve: Garnish with fresh parsley and enjoy warm!
