Crab cakes

Ingredients:

    • 1 lb jumbo lump crab meat

    • ½ cup of bread crumbs

    • 1 piece of sourdough bread, finely diced

    • 2 eggs

    • 1 bell pepper, finely diced

    • ¼ of a white onion, finely diced

    • Fresh parsley, finely chopped

    • Seasonings:

      • Garlic powder

      • Salt

      • Pepper

      • Old Bay

      • Cajun Seasoning

    • Secret remoulade sauce:

      • ½ cup greek yogurt

      • 1 tablespoon mayo

      • 1-2 tablespoons ketchup

      • 1 tablespoon yellow mustard

      • ½ -1 teaspoon horse radish

      • Freshly chopped parsley

    Directions:

    1. Prep your vegetables: Start off by prepping your peppers and white onion. They should be very finely diced.

    2. Sauté: In a skillet, begin to sauté your peppers and onions until they are tender. Option to sauté with minced garlic.

    3. Prep your crab mix: In a large mixing bowl combine crab, bread, breadcrumbs, eggs, chopped parsley, and sautéed peppers and onions. Season and adjust to your liking.

    4. Pan Fry: In a hot pan add olive oil and pan fry till crispy. Option to bake at 400 degrees for 13-15 minutes until golden.

    5. Secret Sauce: Combine greek yogurt, mayo, ketchup, mustard, horse radish, and freshly chopped parsley. Mix and adjust accordingly to your liking!

    6. Garnish: Top with freshly chopped parsley and serve with lemon and your homemade sauce! I paired mine with roasted asparagus. Enjoy!
