Greek Lemon Potatoes

Ingredients:

    • 6-7 potatoes quartered

    • 1 1/2 cups of chicken bone broth

    • 1/3 cup of olive oil

    • The juice of.3 lemons

    • 1 tbsp minced garlic

    • Seasonings:

      • Garlic powder

      • Oregano

      • Salt & pepper to taste

    Directions:

    1. Preheat the oven: Preheat the oven to 400 degrees.

    2. Prep the potatoes: Cut your potatoes into halves or quarters. Place them into your 9X13 baking dish.

    3. Season your potatoes: Pour your olive oil on the potatoes. Season with salt, pepper, garlic powder, and oregano. Mix in minced garlic.

    4. Create your sauce: Combine chicken bone broth, and the juice of 3 lemons. Making sure potatoes are well coated in the broth. Adjust accordingly, taste the broth and add more lemon or seasoning to your liking.

    5. Bake: Cover with aluminum foil and bake at 400 degrees for 30-40 minutes. Remove the foil, mix the potatoes and put them back into the oven for 30 minutes until most of the liquid has absorbed into the potatoes. Potatoes should be tender and soft. For crispiness, broil on high for additional few minutes.

    6. Serve: Remove the potatoes from the oven and let them cool off slightly. Option to garnish with fresh parsley and lemon slices.
