Broccoli and Cheddar Meatballs

Ingredients:

    • 1 lb ground beef, ground turkey, or ground chicken

    • 1 cup of raw broccoli, finely chopped

    • 3/4 cup of sharp cheddar cheese

    • 1/2 cup breadcrumbs

    • 1 egg

    • 1-2 tbsp minced garlic

    • Seasonings:

      • Garlic powder

      • Onion powder

      • Salt & pepper to taste

    Directions:

    1. Preheat the oven: Preheat the oven to 400 degrees and line a baking sheet with parchment paper.

    2. Prep the broccoli: Finely chop raw broccoli into very small pieces. This allows it to cook in the oven without adding extra moisture.

    3. Make the mixture: In a large bowl combine ground beef, broccoli, cheddar, breadcrumbs, egg, garlic, and seasonings. Mix together.

    4. Form meatballs: Roll into golf ball sized meatballs.

    6. Bake: Place on prepared baking sheet and bake 18-22 minutes, until cooked through and lightly golden. Enjoy!
