Creamy Tuscan Sausage and White Bean Soup

Ingredients:

  • Ingredients:

    • 1 pack of mild Italian sausage

    • 1 carton of chicken bone broth

    • 1 zucchini

    • 1 onion

    • 1tbsp minced garlic

    • 2 tbsp tomato paste

    • 1 can of crushed tomatoes

    • 1 can of cannellini beans

    • 2 cups of ditalini pasta

    • 1 bag of spinach

    • 1 cup of cottage cheese

    • Seasonings:

      • 1/2 tsp salt

      • 1/2 tsp pepper

      • 1/2 tsp garlic powder

      • 1 tsp Italian seasoning

  • Directions:

    1. Cook the sausage: Heat 1/2 tsp of olive oil in a large pot and brown your sausage. When fully cooked add in your onion and sauté until soft.

    2. Add your base: Stir in tomato paste and minced garlic. Cook for 1-2 minutes until fragrant. Season with salt, pepper, garlic powder, and Italian seasoning. Add in your diced zucchini and cook 2-3 minutes until tender.

    3. Add your liquids: Add crushed tomatoes, chicken bone broth, and white beans. Bring to a simmer.

    4. Add your pasta: Begin to add your ditalini pasta and cook until al dente.

    5. Add your cottage cheese: In a blender blend cottage cheese and bone broth until smooth. Stir into soup for extra creaminess and protein.

    6. Top it off: Fold in spinach, and simmer until lightly wilted. Top with parmesan cheese & fresh parsley!
