Greek Chicken Bowls

Ingredients:

  • Marinade:

    • 3/4 cup of plain greek yogurt

    • Zest of 1 lemon

    • Juice of 1 lemon

    • 3 cloves of garlic, minced

    • 2 tbsp olive oil

    • Seasonings:

      • 1 1/2 dried oregano

      • 1/4-1/2 tsp black pepper

      • 3/4 tsp salt

      • 1/2 tsp smoked paprika

    • Greek dressing:

      • 1/4 cup plain greek yogurt or tzatziki

      • 3/4 tsp salt

      • 1/2 tsp black pepper

      • 1/2 tsp oregano

      • 1/4 cup red wine vinegar

      • 1 tbsp olive oil

      • 1 tbsp dijon mustard

      • juice of 1/2 lemon

      • OPTIONAL: 1/4 cup of apple cider vinegar

  • Directions:

    1. Marinate chicken: Allow chicken to marinate for an hour-overnight.

    2. Cook: I used the air fryer at 425 for 35-45 minutes (45 minutes for bone in/skin on chicken thighs)

    3. Pair: Pair with a greek salad, rice, and hummus.

    4. Top: Top with parsley for extra garnish & tzatziki!
