Ground Beef and Rice Taco Skillet

Ingredients:

  • Ingredients:

    • 1 lb lean ground beef

    • 1/2 onion, diced

    • 1 tbsp minced garlic

    • 1 cup of jasmine or long-grain white rice (uncooked)

    • 1 can of fire roasted tomatoes

    • 1 1/2 cups of beef bone broth

    • 1 cup of corn

    • 1/3 cup of cheese

    • Juice of 1/2 lime

    • 1 can of black beans

    • Optional toppings: Cilantro, greek yogurt, avocado, jalapeño, or salsa

    • 1 packet of taco seasoning or

    • Seasonings:

      • 1 tsp chili powder

      • 1 tsp cumin

      • 1/2 tsp paprika

      • 1/2 tsp garlic powder

      • 1/2 tsp onion powder

      • Salt & pepper to taste

  • Directions:

    1. Sauté the beef: Heat a large skillet over medium-high heat. Add beef and break it up. Season with salt & pepper and cook until browned. Drain excess fat if needed.

  • 2. Add veggies: Stir in onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.

  • 3. Season: Add taco seasoning and mix well to coat the beef & veggies.

  • 4. Add rice & liquids: Add the uncooked rice, fire roasted tomatoes, black beans, and corn.

  • 5. Cook: Reduce heat, cover, and simmer for 15-18 minutes or until rice is tender and liquid is absorbed.

  • 6. Top it off: Turn off the heat, add lime juice, cheese, cilantro and any additional toppings you are using. Cover to allow cheese to melt.
