Ground Beef and Rice Taco Skillet
Ingredients:
Ingredients:
1 lb lean ground beef
1/2 onion, diced
1 tbsp minced garlic
1 cup of jasmine or long-grain white rice (uncooked)
1 can of fire roasted tomatoes
1 1/2 cups of beef bone broth
1 cup of corn
1/3 cup of cheese
Juice of 1/2 lime
1 can of black beans
Optional toppings: Cilantro, greek yogurt, avocado, jalapeño, or salsa
1 packet of taco seasoning or
Seasonings:
1 tsp chili powder
1 tsp cumin
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Salt & pepper to taste
Directions:
1. Sauté the beef: Heat a large skillet over medium-high heat. Add beef and break it up. Season with salt & pepper and cook until browned. Drain excess fat if needed.
2. Add veggies: Stir in onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.
3. Season: Add taco seasoning and mix well to coat the beef & veggies.
4. Add rice & liquids: Add the uncooked rice, fire roasted tomatoes, black beans, and corn.
5. Cook: Reduce heat, cover, and simmer for 15-18 minutes or until rice is tender and liquid is absorbed.
6. Top it off: Turn off the heat, add lime juice, cheese, cilantro and any additional toppings you are using. Cover to allow cheese to melt.
