Lemon Dijon Cod

Ingredients:

  • 3 pieces of cod

  • 1/2 cup of flour

  • 2 tbsp olive oil

  • 1 pack of cherry tomatoes

  • 2 cloves of garlic

  • 1/2 cup of chicken bone broth

  • 1-2 lemons

  • 2 tbsp capers

  • 1 tbsp dijon mustard

  • Fresh parsley

  • Seasonings: Italian seasoning, garlic powder, and black pepper.

Directions:

  1. Prep the cod & season your fish: In a bowl combine 1/2 cup of flour, 1 tbsp Italian seasoning, 1/2 tbsp of garlic powder, and 1/2 tbsp of black pepper. Lightly season fish with the same seasonings. Lightly coat cod in flour, shaking off excess.

  2. Sear the fish: Heat 1 tbsp of olive oil in a large non-stick or stainless steel pan over medium heat. Once hot, add cod fillets and cook 2-3 minutes per side, until lightly golden. Remove from pan and set aside

  3. Make the sauce: In the same skillet, lower heat slightly and add another 1 tbsp of olive oil. Saute 2 cloves of chopped garlic. Add 1 pack of cherry tomatoes and let cook until slightly tender but not soggy.

  4. Deglaze: Pour 1/2 cup of chicken bone broth and the juice of 1-2 lemons. Depending on your preference, I used 2 lemons some may prefer one. Scraping up any bits stuck to the pan. Simmer for 3-4 minutes, allowing the sauce to reduce.

  5. Add 2 tbsp of capers & 1 tbsp of dijon mustard. Simmer 1-2 minutes more until sauce thickens.

  6. Finish the dish: Return cod to the pan, spooning the sauce over the top to reheat gently for about 1 minute. Garnish with thin lemon slices and fresh parsley.
